To prepare ahead, cook 3 thick red onion slices in 2 teaspoons of canola oil until softened.
Shred 10 slices of pork tenderloin, then add the pork, ½ teaspoon of sugar, and 1 tablespoon of wine vinegar to the onions in the pan.
Season with a pinch of red pepper flakes, and then package in 2 plastic dishes to take along to work.
At lunch, heat up the meat mixture and add it to warmed 9” whole-wheat flour tortillas and enjoy!
